12 boneless chicken breast halves 3 tablespoons olive oil
2 mangos 1/4 teaspoon salt
1/4 cup fresh lime juice 1/4 teaspoon white pepper
Zest from one lime
Peel mango and cut flesh from seed. Place mango in food processor with lime zest, add
seasoning. Blend till smooth. Pour half over chicken. Marinate 1 hour or overnight. Grill
chicken over medium high heat till golden brown and no longer pink. Serve with
remaining marinade. Serves 6.
