Butterfly Chicken


1 whole chicken, split down the back 1 tablespoon horseradish

1/2 cup olive oil 1 teaspoon salt

1/2 cup white vinegar 1/2 teaspoon mustard

1/4 cup chili sauce 1 garlic clove, minced


Place chicken in a shallow pan. Combine oil and remaining ingredients, mixing well. Pour

over chicken and marinate 2 hours in refridgerator or overnight. Grill over medium heat,

skin side up 25 minutes. Turn chicken, grill another 20 minutes. Basting frequently until

done and no longer pink. Serves 4.
